Step 1: Heat oil in dutch oven over medium high heat.
Step 2: Sprinkle pork with salt and pepper to taste.
Step 3: Brown on all sides in oil and transfer to plate.
Step 4: Melt butter in same pan.
Step 5: Add onions and cook until soft, about 4 minutes. Add the brown sugar
Step 6: Cook stirring until onions begin to caramelize, another 4 minutes.
Step 7: Add the mustard and sauerkraut
Step 8: Stir until combined
Step 9: And then pour in the broths.
Step 10: Bring to a boil stirring to loosen any browned bits in the pan.
Step 11: Return the meat to pan.
Step 12: Cover and reduce heat and simmer until meat is tender , 4 hours. Making sure not to boil dry adding water as needed
