Ingredients

The ingredients are:
  • 1 tablespoon olive oil
  • 2 pounds boneless pork loin
  • 1⁄2 teaspoons salt
  • 1/2 teaspoon freshly ground black pepper
  • 1⁄4 cup butter
  • 3 cups sweet onions,thinly sliced
  • 1⁄8 cup brown sugar, packed
  • 1⁄8 cup dijon mustard
  • 28 ounces sauerkraut, drained
  • 1/2 cup chicken broth
  • 1/2 cup beef broth

How to Make

  • Step 1: Heat oil in dutch oven over medium high heat.

  • Step 2: Sprinkle pork with salt and pepper to taste.

  • Step 3: Brown on all sides in oil and transfer to plate.

  • Step 4: Melt butter in same pan.

  • Step 5: Add onions and cook until soft, about 4 minutes. Add the brown sugar

  • Step 6: Cook stirring until onions begin to caramelize, another 4 minutes.

  • Step 7: Add the mustard and sauerkraut

  • Step 8: Stir until combined

  • Step 9: And then pour in the broths.

  • Step 10: Bring to a boil stirring to loosen any browned bits in the pan.

  • Step 11: Return the meat to pan.

  • Step 12: Cover and reduce heat and simmer until meat is tender , 4 hours. Making sure not to boil dry adding water as needed
