Step by Step Method

Step 1

Place potatoes and garlic in a large saucepan or small stock pot, cover with cool water by 1 inch and bring to a boil over high heat. Cook until potatoes and garlic are very tender, 15 to 18 minutes.

Step 2

Meanwhile, in a small saucepan, combine milk, broth and mushrooms. Bring to a simmer over medium heat, cover and set aside.

Step 3

Drain potatoes and garlic and return mixture to pot. Add milk-mushroom mixture, thyme, salt and pepper and mash with a potato masher to desired consistency. Garnish with additional thyme leaves, if desired.

I had been wondering what to do with some leftover dried porcini mushrooms and this was perfect! I cut the recipe in half and it was very, very good! Next time I'll put in the full amount of garlic (I love garlic)!Made FYC

Loved the mashed potatoes which I scaled back to 1 serve and a very generous one too, I used dried shitake mushrooms as that is what I had on and soaked in the milk mix as directed and once soft if removed the stems and chopped up the mushrooms before adding to the mashed potatoes, thank you TeresaS, made for Alphabet Soup tag game.
