Step 1: Rinse the rice under cold water until the water runs clear. Drain well.
Step 2: Place the rinsed rice into the Instant Pot insert. Add water and a pinch of salt. Stir to combine.
Step 3: Close the lid of the Instant Pot and ensure the valve is set to the sealing position.
Step 4: Select the "Manual" or "Pressure Cook" setting and set the cooking time to 4 minutes on high pressure.
Step 5: Once the cooking time is complete, allow for a natural pressure release for 10 minutes, then carefully perform a quick release to release any remaining pressure.
Step 6: Open the Instant Pot and fluff the rice with a fork.
Step 7: Add the pineapple chunks, diced mango, diced red bell pepper, diced red onion, chopped cilantro, lime juice, and salt (to taste -- make sure you taste to see if it needs salt) to the cooked rice. Stir gently to combine.
Step 8: Close the Instant Pot lid and let the rice sit for 10 minutes to allow the flavors to meld together.
Step 9: After 10 minutes, open the Instant Pot and give the rice a final stir.
