Step by Step Method
Step 1
Generously season 1 quart water with salt and bring to a boil.
Step 2
Add potatoes and cover.
Step 3
Cook until tender, about 15 minutes.

Meanwhile, mix mustard, sour cream and 1 tablespoon chives and green onions.
Step 5
Drain potatoes and run under cold water to cool.
Step 6
Toss with creamy mustard mixture until evenly coated.
Step 7
Add bacon and red onion.
Step 8
Chill for at least 20 minutes.
Step 9
Remove from refrigerator and stir.
Step 10
Garnish with remaining chives.
