Ingredients

The ingredients are:
  • 2 pounds red potatoes with skins, diced, (3 cups)
  • 1/4 cup spicy horseradish mustard, (Plochman’s)
  • 6 ounces sour cream, (3/4 cup)
  • 2 tablespoons fresh chives, minced
  • 2 green onions, minced
  • 1/4 cup red onions, diced
  • 1 ounce real bacon bits

How to Make

  • Step 1: Generously season 1 quart water with salt and bring to a boil.

  • Step 2: Add potatoes and cover.

  • Step 3: Cook until tender, about 15 minutes.

  • Step 4: Meanwhile, mix mustard, sour cream and 1 tablespoon chives and green onions.

  • Step 5: Drain potatoes and run under cold water to cool.

  • Step 6: Toss with creamy mustard mixture until evenly coated.

  • Step 7: Add bacon and red onion.

  • Step 8: Chill for at least 20 minutes.

  • Step 9: Remove from refrigerator and stir.

  • Step 10: Garnish with remaining chives.
