Step by Step Method

Step 1

In a saucepan

Step 2

Combine 1 cup of water with the sugar, raspberries, lemon zest, mint and salt.

Step 3

Bring to a simmer and cook until the sugar has dissolved and the raspberries have broken apart

Step 4

2 minutes.

Step 5

Remove from the heat and let cool completely, then strain into a pitcher.

Step 6

Add the remaining 3 cups of water, the lemon juice, vodka if using and fill with ice.

Step 7

Stir until well chilled, then serve.

This raspberry lemonade is delicious. I bought a bag of lemons and only got 1 cup of juice so I made 1/2 recipe. I cut down on the sugar thinking the recipe might have too much but I had to add it back because it needed every bit of sugar. This has a wonderful tartness.
