Step by Step Method
Step 1
Put cake mix, oil, apricot nectar, egg yolks and lemon extract into mixing bowl. Beat at low speed for approximately 5 minutes.
Step 2
Beat egg whites until stiff; fold into cake mixture.
Step 3
Bake in greased tube pan in 350-degree oven 40 to 45 minutes.
Step 4
Remove cake from pan and apply topping while cake is still warm.
FOR THE TOPPING
Step 5
Beat the grated rind and juice of 1 lemon with 1 1/2 cups powdered sugar until smooth. (If mixture is too thin, add extra sugar.) Spread over top and sides of warm cake.
