"The original recipe came from a packet that my daughter received in culinary school. It has been slightly altered. I have not tried the newer version as I am allergic to mangoes. "

Step by Step Method

Step 1

Peel and dice plantain.

Step 2

Melt butter in a skillet over medium high heat.

Step 3

Add plantain and saute until golden brown.

Step 4

Add pineapple, mango, sherry, stock, chili, salt/pepper, sugar and saute until pineapple is softened.

Step 5

Serve on your favorite grilled fish!
