Step by Step Method
Step 1
Peel and dice plantain.
Step 2
Melt butter in a skillet over medium high heat.
Step 3
Add plantain and saute until golden brown.
Step 4
Add pineapple, mango, sherry, stock, chili, salt/pepper, sugar and saute until pineapple is softened.
Step 5
Serve on your favorite grilled fish!
