Step 1: Peel and dice plantain.
Step 2: Melt butter in a skillet over medium high heat.
Step 3: Add plantain and saute until golden brown.
Step 4: Add pineapple, mango, sherry, stock, chili, salt/pepper, sugar and saute until pineapple is softened.
Step 5: Serve on your favorite grilled fish!
