Step by Step Method
Step 1
Preheat oven to 350°F.
Step 2
Cream shortening and sugars together.
Step 3
Add in egg and pineapple, mix well.
Step 4
In a separate bowl, sift flour, salt, baking soda and baking powder together.
Step 5
Add to the shortening mixture, mix together, add vanilla and nuts and combine well.
Step 6
Drop by teaspoonful onto greased baking sheet and bake 15 - 20 minutes.
Step 7
Meanwhile make Butter cream icing.
Step 8
In a medium bowl add butter, powdered sugar, heavy whipping cream, vanilla extract and salt. Cream together well.
Step 9
Remove cookies from oven and cool on a wire rack.
Step 10
When cool, ice with the Butter cream icing.
