Step 1: Preheat oven to 350°F.
Step 2: Cream shortening and sugars together.
Step 3: Add in egg and pineapple, mix well.
Step 4: In a separate bowl, sift flour, salt, baking soda and baking powder together.
Step 5: Add to the shortening mixture, mix together, add vanilla and nuts and combine well.
Step 6: Drop by teaspoonful onto greased baking sheet and bake 15 - 20 minutes.
Step 7: Meanwhile make Butter cream icing.
Step 8: In a medium bowl add butter, powdered sugar, heavy whipping cream, vanilla extract and salt. Cream together well.
Step 9: Remove cookies from oven and cool on a wire rack.
Step 10: When cool, ice with the Butter cream icing.
