Ingredients

The ingredients are:
  • FOR COOKIE DOUGH
  • 1/2 cup shortening
  • 1 large egg
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar (white)
  • 1/2 cup crushed pineapple (drained)
  • 1/2 cup chopped pecans (pieces)
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • FOR BUTTER CREAM ICING
  • 1/2 cup unsalted butter (soften)
  • 2 cups powdered sugar
  • 1 to 1 1/2 tablespoons heavy whipping cream
  • 1/2 teaspoon vanilla extract
  • Salt, dash

How to Make

  • Step 1: Preheat oven to 350°F.

  • Step 2: Cream shortening and sugars together.

  • Step 3: Add in egg and pineapple, mix well.

  • Step 4: In a separate bowl, sift flour, salt, baking soda and baking powder together.

  • Step 5: Add to the shortening mixture, mix together, add vanilla and nuts and combine well.

  • Step 6: Drop by teaspoonful onto greased baking sheet and bake 15 - 20 minutes.

  • Step 7: Meanwhile make Butter cream icing.

  • Step 8: In a medium bowl add butter, powdered sugar, heavy whipping cream, vanilla extract and salt. Cream together well.

  • Step 9: Remove cookies from oven and cool on a wire rack.

  • Step 10: When cool, ice with the Butter cream icing.
