I have traced this recipe as far back as the 1400's The garlic improves with age for as long as 15 years. I am still eating from a jar of this we made 6 years ago. This is not something you eat right away, it marinades for 30 days at minimum. SOURCE Shadows"

Step by Step Method

Step 1

Separate garlic cloves, but do not peel.

Step 2

Place all ingredients in a large heavy-bottom saucepan.

Step 3

Bring to a boil; cook for 10 minutes, stirring from time to time.

Step 4

Reduce heat to medium and cook 5 minutes.

Step 5

Cool to room temperature.

Step 6

Transfer to a large glass or ceramic jar large enough to hold garlic and the liquid.

Step 7

Tightly seal.

Step 8

Refrigerate at least 1 month before serving.

Step 9

The garlic improves with age for as long as 15 years.

OMG! OMG! If I could rate this ten stars, I would! This garlic was simply amazing. We did manage to wait the entire marinating time, but it was gone before we knew it. Had folks over for sunset-n-wine, and these were the first things gone - even people who "hate" garlic were chowing down. Next time - double recipe!!!
