Step by Step Method

Step 1

Make sure pears are peeled, cored, and chopped or grated.

Step 2

Grate rind of lime and extract juice.

Step 3

Mix pears, sugar, rind, juice and ginger together in pan. Bring to boil. Turn down heat and simmer 45 minutes. Stirring until food is clear and liquid has thickened.

Step 4

Pour into jars and seal.

I had a batch of pears that I was going to make pear butter out of, but it yielded a lot of juice and very little pears. I wasn't sure how much the grated or chopped pears should make, since I had so much liquid. So I looked at a bunch of different but similar recipes on line. I ended up using Sure-Jell low sugar pectin and the rest of the ingredients you listed. I ended up using 6 cups of pear stuff and 4 cups of sugar. It made 6 half-pints of delicious Pear Honey. Thanks Dee!! (Hope it's ok that I changed so much of your recipe!)
