Step 1

Combine shortening, ,peanut butter, sugars, and egg

Step 2

Blend in flour, baking soda, baking powder and salt

Step 3

Cover and chill

Step 4

Heat oven to 375

Step 5

Shape dough into 1-inch balls and place 3 inches apart on ungreased baking sheet

Step 6

With fork dipped in flour,flatten balls in crisscross pattern

Bake 10 to 12 minutes or until set, but not hard

Hubby had a cookie craving - these looked quick and yummy - and they are!! I did not wait to chill the dough and they rolled up and baked beautifully. 10 minutes was perfect for a crispy outside and tender inside. Might add a little vanilla next time but delicious as written - Thanks Fizzybrat!
