Peach/Mandarin Orange Jello (Dairy Free)

"I took my basic recipe and made it dairy free, using coconut cream. I've also used water kefir for the cold water when preparing the jello. I just let the water get warm enough (not boiling) to dissolve the powder, then cooled it a bit and added the kefir. See my water kefir recipe, a very healthy thing to be drinking daily."

Step by Step Method
Step 1
Place the coconut cream (or the can of coconut milk) in the fridge to chill for about 4 hours (alternatively, you may place it in the freezer for 30 minutes). Remove the cream from the water, carefully keeping the water away from the cream.
Step 2
Prepare Jello according to package directions, adding in the reserved mandarin orange juice for part of the water.
Step 3
Put in fridge to chill until partially set, about 1 1/2 to 2 hours.
Step 4
Prepare the whipped 'cream'. Make sure your glass bowl and beaters are chilled. Whip the coconut cream until a thick consistency. It won't be like Cool Whip, but thicker and creamier.
Step 5
Slowly add in the powdered sugar and powdered rice milk. Add in the vanilla.
Step 6
When Jello is partially set, fold in the oranges and the coconut cream and return to fridge to set completely, another 1-2 hours, or so.
