Peach Enchiladas
"Featured in Southern Living's July 2011 issue, this recipe won a South Carolina Cook-Off in 2004. These dumplings are easy to make. My husband asks me to make these whenever fresh peaches become available. I halve this and bake it in an 8 inch baking dish. Reviewers on SL's recipe site have reported success with reducing the butter and sugar when making this. Mountain Dew is a citrus-flavored soft drink, if this isn't available in your area."

Step by Step Method
Step 1
Preheat the oven to 350°F.
Step 2
First, peel and quarter the peaches. (Scoring an X on the end of the peach and blanching them briefly makes peeling very easy.)
Step 3
Open the crescent rolls and separate them into triangles. Roll up a peach slice in one crescent triangle, starting with the wide end of the triangle. Lay the peach slice in a lightly greased 13 by 9 baking dish. Repeat with remaining peaches and crescents.
Step 4
Melt the butter. Mix the melted butter with the cinnamon and sugar. Drizzle the butter-sugar mixture all over the peaches.
Step 5
Pour Mountain Dew over the dumplings.
Step 6
Bake for 45 minutes, or golden brown and bubbly.
Step 7
If you are feeling over the top, serve with a scoop of vanilla ice cream.
