Paulette's Fruitcake

"A co-worker of mine brought this cake into work for us to enjoy during the holiday season and it was enjoyed by all the fruitcake lovers. When I asked her for the recipe, she told me she got it off a can of Eagle Brand years ago. Here is that recipe. This was my DM favourite fruitcake. Thanks Paulette for digging it up for me."

Step by Step Method
Step 1
Stir together flour and baking soda; set aside.
Step 2
Combine eggs, mincemeat, condensed milk, chopped fruits and nuts.
Step 3
Add dry ingredients; mix well.
Step 4
Divide batter between two greased 9” x 5” loaf pans.
Step 5
Bake in a preheated 300 degree Fahrenheit oven, for 1 hour and 20 to 25 minutes, or until done.
Step 6
Cool 15 minutes.
Step 7
Turn out of pans, cool completely.
Step 8
Garnish with glace cherries if using.
