Step by Step Method

Step 1

Mix meat mixture ingredients until well blended.

Step 2

Shape into four 1 1/4-inch thick patties.

Step 3

Press topping into flat sides.

Step 4

Let stand 15 minutes.

Step 5

Lightly sprinkle regular salt over bottom of a large nonstick skillet.

Step 6

Place over medium high heat until hot.

Step 7

Add patties and cook until well browned on both sides and no longer pink in centers, about 15 minutes.

Step 8

Add mushrooms 10 minutes in

Step 9

Remove patties

Step 10

Remove any excess fat in skillet, leaving brown bits and mushrooms.

Step 11

Deglaze with brandy

Step 12

Add broth and cook and stir until reduced

Step 13

Add butter.

Step 14

Add cream

Step 15

Stir over high heat until reduced

Step 16

Spoon over meat.

Step 17

Sprinkle with remaining parsley.

Great weeknight meal. Fast, tasty, and comfort on a plate. I did need to substitute the parsley because "somebody" didn't feel like picking some up at the market....hmmmm, so used fresh chopped basil and chopped scallions. It came out tasty, so no complaints. Next time, and there will be a next time, I will reduce the salt in the topping and won't add salt to the skillet as it was a bit too salty. Thank you, Dee, for sharing. Made it for "For Your Consideration" tag game.
