Ingredients

The ingredients are:
  • Meat mixture:
  • 1 1⁄4 pounds ground beef
  • 1⁄2 teaspoon salt
  • 1 teaspoons worcestershire sauce
  • 3 garlic cloves, crushed
  • 1/4 cup parsley,finely chopped
  • Topping:
  • 2 teaspoons cracked black peppercorns, very coarsely
  • 1⁄4 teaspoon salt, preferably coarse
  • 1/2 teaspoon montreal salt
  • Cream sauce:
  • 2⁄3 cup beef broth
  • 2 tablespoons brandy
  • 4 ounces heavy cream,(1/2 cup)
  • 2 tablespoons butter
  • 2 mushrooms,sliced
  • 1 1⁄2 tablespoons parsley,minced

How to Make

  • Step 1: Mix meat mixture ingredients until well blended.

  • Step 2: Shape into four 1 1/4-inch thick patties.

  • Step 3: Press topping into flat sides.

  • Step 4: Let stand 15 minutes.

  • Step 5: Lightly sprinkle regular salt over bottom of a large nonstick skillet.

  • Step 6: Place over medium high heat until hot.

  • Step 7: Add patties and cook until well browned on both sides and no longer pink in centers, about 15 minutes.

  • Step 8: Add mushrooms 10 minutes in

  • Step 9: Remove patties

  • Step 10: Remove any excess fat in skillet, leaving brown bits and mushrooms.

  • Step 11: Deglaze with brandy

  • Step 12: Add broth and cook and stir until reduced

  • Step 13: Add butter.

  • Step 14: Add cream

  • Step 15: Stir over high heat until reduced

  • Step 16: Spoon over meat.

  • Step 17: Sprinkle with remaining parsley.
