Step 1: Mix meat mixture ingredients until well blended.
Step 2: Shape into four 1 1/4-inch thick patties.
Step 3: Press topping into flat sides.
Step 4: Let stand 15 minutes.
Step 5: Lightly sprinkle regular salt over bottom of a large nonstick skillet.
Step 6: Place over medium high heat until hot.
Step 7: Add patties and cook until well browned on both sides and no longer pink in centers, about 15 minutes.
Step 8: Add mushrooms 10 minutes in
Step 9: Remove patties
Step 10: Remove any excess fat in skillet, leaving brown bits and mushrooms.
Step 11: Deglaze with brandy
Step 12: Add broth and cook and stir until reduced
Step 13: Add butter.
Step 14: Add cream
Step 15: Stir over high heat until reduced
Step 16: Spoon over meat.
Step 17: Sprinkle with remaining parsley.
