Step by Step Method
Step 1
Slice potatoes about 1/4 inch thick and spread with onions in a baking pan coated with cooking spray.
Step 2
Sprinkle with parmesan cheese and 2 cups of the shredded cheese.
Step 3
Top with butter, sun dried tomatoes, bacon, chives and seasonings.
Step 4
Cover with aluminum foil.
Step 5
Bake in a preheated 350 degree Fahrenheit oven for approximately 1 hour, until potatoes are fork tender.
Step 6
Spread remaining cheese over top and serve. (You may return the pan to the oven to "brown" the cheese under the broiler if you like, but this is not necessary. The cheese does melt nicely over the potatoes without having to broil)
