Step 1

Saute onion and celery in butter in saucepan until tender.

Step 2

Add remaining ingredients; bring to a boil.

Step 3

Lower heat; cover and simmer about 20 minutes or until rice is tender.

Step 4

Remove from heat; toss lightly with a fork. Replace cover and let rice stand about 5 minutes.

This was a great side with salmon that I squeezed a little orange juice on and then added some brown sugar and zest of the orange with butter. They paired really well together and we had a delicious dinner for 4!

Derf "RIP" Forever in our Kitchen

Made this delicious rice for supper tonight, love the orange flavour, very refreshing and the celery retains the crunch. I used brown rice, it workded just fine but had to cook a wee bit longer, just made half a recipe for the two of us.
