Step by Step Method
Step 1
Preheat oven to 200°F.
Step 2
Season beef well with salt and pepper and place in an oven-safe dish. Set aside.
Step 3
Thinly peel 1 orange, removing any bitter white pith. Julienne the peel and place in a medium bowl. Zest another orange into the bowl. Halve and juice all 4 oranges into the same bowl. Stir in hoisin, tomato paste, garlic and ginger. Pour over the meat. Cover dish tightly with foil and bake 2-3 hours.
Step 4
Remove meat from oven. Raise oven temperature to 400°F. Carefully remove foil and pour juices into a small saucepan. simmer over medium heat to reduce and thicken, about 15-20 minutes. Add sliced mushrooms to dish with meat. Return to oven, uncovered, for 15 minutes to brown.
Step 5
Transfer meat to a warm plate; top with mushrooms and reduced juices. Garnish with reserved green onions. Serve with rice or pasta of your choice.
