Ingredients

The ingredients are:
  • 4 pounds beef chuck short ribs (boneless)
  • Salt and pepper to taste
  • 1 1/2 pounds oranges (4 oranges)
  • 1/2 cup hoisin sauce
  • 5 tablespoons tomato paste
  • 2 cloves garlic, minced
  • Fresh gingerrroot (2-inch piece fresh ginger, peeled and thinly sliced)
  • 1 pound porcini mushrooms (sliced, or portabella or shiitake mushrooms)
  • 4 green onions (trimmed and sliced, for garnish)

How to Make

  • Step 1: Preheat oven to 200°F.

  • Step 2: Season beef well with salt and pepper and place in an oven-safe dish. Set aside.

  • Step 3: Thinly peel 1 orange, removing any bitter white pith. Julienne the peel and place in a medium bowl. Zest another orange into the bowl. Halve and juice all 4 oranges into the same bowl. Stir in hoisin, tomato paste, garlic and ginger. Pour over the meat. Cover dish tightly with foil and bake 2-3 hours.

  • Step 4: Remove meat from oven. Raise oven temperature to 400°F. Carefully remove foil and pour juices into a small saucepan. simmer over medium heat to reduce and thicken, about 15-20 minutes. Add sliced mushrooms to dish with meat. Return to oven, uncovered, for 15 minutes to brown.

  • Step 5: Transfer meat to a warm plate; top with mushrooms and reduced juices. Garnish with reserved green onions. Serve with rice or pasta of your choice.
