Step by Step Method

Step 1

Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.

Step 2

In a bowl, toss the sweet potato rounds with olive oil, paprika, salt, and pepper until they are evenly coated.

Arrange the sweet potato rounds on the prepared baking sheet in a single layer. Bake for about 20-25 minutes, or until they are tender and slightly crispy.

Step 4

Toast the slices of bread until they are lightly golden and crisp.

Step 5

Assemble the open-faced sandwiches by placing a slice of deli meat on each slice of toasted bread.

Step 6

Spread a tablespoon of lingonberry jam (or cranberry sauce) on top of each slice of deli meat.

Step 7

Place a few roasted sweet potato rounds on top of the jam.

Step 8

Top each sandwich with a slice of cheese.

Step 9

Place the assembled sandwiches back in the oven for a few minutes, just until the cheese melts.

Step 10

Garnish with fresh dill.

Step 11

Serve warm.

The sweet potatoes in these made me pretty curious and oh, it was a good choice. Used deli turkey cold cuts and cranberry sauce - so tasty and I was sad when they were all gone. Thank you, NE Lady, for sharing. Made it for The AmaZ'ing Race 2023 tag game.
