Step 1: Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
Step 2: In a bowl, toss the sweet potato rounds with olive oil, paprika, salt, and pepper until they are evenly coated.
Step 3: Arrange the sweet potato rounds on the prepared baking sheet in a single layer. Bake for about 20-25 minutes, or until they are tender and slightly crispy.
Step 4: Toast the slices of bread until they are lightly golden and crisp.
Step 5: Assemble the open-faced sandwiches by placing a slice of deli meat on each slice of toasted bread.
Step 6: Spread a tablespoon of lingonberry jam (or cranberry sauce) on top of each slice of deli meat.
Step 7: Place a few roasted sweet potato rounds on top of the jam.
Step 8: Top each sandwich with a slice of cheese.
Step 9: Place the assembled sandwiches back in the oven for a few minutes, just until the cheese melts.
