Step by Step Method

Step 1

Combine mince, breadcrumbs, egg and 2 tablespoons of the pesto in a large bowl and then shape mix into 4 patties.

Step 2

Heat half the oil in a large frying pan over moderate heat and cook patties for 3 to 4 minutes each side or until browned and cooked through and then remove from the pan and place on a baking tray.

Step 3

Add remaining oil to the pan and cook and stir onion for 2 to 3 minutes or until golden and remove from the heat.

Step 4

Preheat an oven grill/broiler to moderately high and cook focaccia under the grill/broil until golden.

Step 5

Sprinkle the patties with cheese and cook patties under the grillbroiler until cheese bubbles and is melted.

Step 6

Whisk mayonnaise and remaining pesto.

Step 7

Place one piece of focaccia on each serving plate and spread each focaccia with half the pestor mayonnaise and then top with spinach, tomato, onion and patties and then top with the remaining pesto mayonnaise.

Step 8

Serve burgers with wedges, chips/fries or hash browns.

I cannot seem to find foccacia bread! I even went to Panera bread and could not get any! So I subbed French Hamburger Buns. The sun-dried tomato pesto is essential to the burgers and the mayo is divine. I'll turn to this burger when I need to make an "indoor" burger! Thanks for sharing! Made for FYC tag game.

I would give this more than 5 stars. It looks so attractive and tastes so great. I used a pita as the base (I had them on hand). This is one burger that will be repeated several times over.
