"If possible use a Vidalia onion or any other sweet onion. If using a regular yellow onion, increase the sugar to 1 tsp. This is great on burgers, sausages and with curry."

Kind of sweet and tangy and we loved every bite! Enjoyed this with two meals... and it tastes much better than my photo looks! Made for Billboard Tag in the forums.

I would love to try Vidalia onions...just once to see what they taste like....lol I may have been led astray and looked up a substitute for Vidalia and it came up eschalots ~ which I used. Not a great taste so I added red onions to the mix and it was a lot better. Hubby loved them, just a little bitter for me, (probably the eschalots ) but he had them with sausages, so this made for a great dish for him.

A perfect accompaniment as a topping for grilled sausage sandwiches. It also made for a great topping on burgers. Used 1 Vidalia and half of a purple onion, equaling 2 cups, which I wound-up doubling this recipe. Glad I did because it was Yum! Thank you Luvcookn for sharing. Made it for Billboard tag.

I made some up ahead of time to give the flavors a chance to mix in. I made this special to have with some Italian sausages off the grill. Delicious!!

A real winner and as good as I expected a Luvcookn recipe to be! Loved this Onion Relish, I used it over a grilled sausage for lunch, great on super burgers and yes with a curry dish. I am looking to serving this at our summer cookouts - I know it will impress! Into my recipe drawer for this one. P.S. I was a touch generous with the cayenne pepper!
