Step by Step Method

Step 1

Sprinkle pork chops with salt and pepper.

Step 2

In a large nonstick skillet coated with cooking spray, cook pork over medium heat for 4-6 minutes on each side or until lightly browned; remove and keep warm.

Step 3

Add the remaining ingredients to the skillet, stirring to loosen browned bits from pan.

Step 4

Bring to a boil; cook and stir for 2 minutes or until thickened.

Step 5

Return chops to the pan.

Step 6

Reduce heat; cover and simmer for 3-4 minutes or until a thermometer reads 145°.

Step 7

Let stand for 5 minutes before serving.

I used 2 small pork loins that I butterflied, doubled the remaining ingredients and followed instructions as listed. I served this up with mashed potatoes to drizzle the remaining juices over and WOW, this was good!! Made for a perfect family dinner.

Other than scaling back the pork chops to two I followed through on all the ingredients which was great served over Jasmine rice. Next day made an old fashioned hot open faced sandwich with mixed vegetables for lunch and had enough to make an awesome hot wrap for my evening meal. Enjoyed, added to my favorites cookbook. Our local co op sells chops in packets of two which worked so well with this recipe!

This is and easy and quick recipe to prepare and it taste so good...the pork was nice and tender and it's made with ingredients I normally have on had...made for "Billboard" tag game...
