  • When selecting butter, opt for unsalted butter for this recipe to ensure there is no added salt.
  • Make sure to use fresh nutmeg for the best flavor. Pre-ground nutmeg can lose its flavor over time.

  • Replace the butter with coconut oil for a dairy-free option. Coconut oil has a high smoke point and will give the pancake a light and fluffy texture. The benefit of this substitution is that it will make the recipe dairy-free, allowing those with dietary restrictions to enjoy it.
  • Replace the whole milk with almond milk for a vegan option. Almond milk is a great dairy-free alternative and will give the pancake a light and creamy texture. The benefit of this substitution is that it will make the recipe vegan-friendly, allowing those with dietary restrictions to enjoy it.

Chocolate Puff Pancake Replace 2 tablespoons butter with 2 tablespoons of melted chocolate. Add 1/4 cup cocoa powder to the egg, milk, flour, sugar and nutmeg mixture. Bake as directed and finish with confectioners sugar, chocolate syrup and fresh berries.

Bacon-Wrapped Asparagus - This classic side dish is a perfect complement to the Old-World Puff Pancake. The salty bacon adds a delicious flavor to the asparagus, and the crunch of the bacon pairs well with the puffiness of the pancake.
