Step by Step Method

Step 1

Preheat oven to 350 degrees F.

Step 2

Grease an 9-inch baking dish.

Step 3

In a large saucepan melted the butter.

Step 4

Add in onion and celery; saute until for (about 4 minutes).

Step 5

Add in garlic and bouillon granules granules; cook for 2 minutes.

Step 6

Add in flour; stir until blended.

Step 7

Gradually stir in broth and light cream Bring to a boil stirring constantly for about 2 minutes or until thickened and bubbly.

Step 8

Stir in chicken and frozen vegetables until combined, then heat through (about 15 minutes) .

Step 9

Season with salt and pepper to taste, then transfer to baking dish.

Step 10

Spoon the spread the hot mashed potatoes over the top then sprinkle with Parmesan cheese or shredded cheddar cheese.

Step 11

Bake uncovered for 3-40 minutes or until hot.

I had some leftover dark meat from a turkey I cooked and used that. I also substituted frozen peas and carrots because it's what I had in the freezer. Pure comfort food and so mmmm mmm m good!

I used rotisserie chicken I had left over. What a great comfort food this is and so delicious too. I cut the recipe in half to make less servings. It doesn't take a lot of time in the kitchen either, which I am grateful for, because we have been so busy in work lately!

We love chicken pot pie and when I saw this I thought, Why not, so I made it and my kids loved it! It's so delicious and so easy to whip up using potatoes. Now a favorite and requested at least twice a month!

Real good hearty chicken meal. Almost like pot pie but the potatoes are just as good and we loved it! We have had it twice and it's on the menu for later this week again. Now in our rotation during the cooler months.
