Step by Step Method
Step 1
Toast coconut in a small skillet over medium heat, 4-6 minutes, stirring occasionally and being careful not to burn it. It's done when some of the flakes are lightly golden.
Step 2
In a medium bowl, stir together toasted coconut, oats, brown rice cereal, flaxseed, and cinnamon.
Step 3
In a bow', mix the nut butter, honey, and vanilla. Pour over oat mixture and stir until everything is well combined. Stir in chocolate chips.
Step 4
Chill in refrigerator for 30 minutes.
Step 5
Use a small scoop, spoon, or your hands to scoop mixture and form into balls. I usually press the mixture into a ball using my palm, rather than rolling it.
Step 6
Store in an airtight container in the refrigerator for up to 1 week.
