Ingredients

The ingredients are:
  • 1/2 cup shredded coconut
  • 1 cup oats (old-fashioned)
  • 1/2 cup rice crisp cereal (brown rice kind)
  • 1/2 cup ground flaxseed
  • 1/4 teaspoon ground cinnamon
  • 1/2 cup nut butter (a mix of both almond butter and peanut butter is really good, can use any nut butter you want)
  • 1/3 cup honey
  • 1 teaspoon pure vanilla extract
  • 1/4 cup mini chocolate chips (can substitute dried blueberries or raisins or Craisins)

How to Make

  • Step 1: Toast coconut in a small skillet over medium heat, 4-6 minutes, stirring occasionally and being careful not to burn it. It's done when some of the flakes are lightly golden.

  • Step 2: In a medium bowl, stir together toasted coconut, oats, brown rice cereal, flaxseed, and cinnamon.

  • Step 3: In a bow', mix the nut butter, honey, and vanilla. Pour over oat mixture and stir until everything is well combined. Stir in chocolate chips.

  • Step 4: Chill in refrigerator for 30 minutes.

  • Step 5: Use a small scoop, spoon, or your hands to scoop mixture and form into balls. I usually press the mixture into a ball using my palm, rather than rolling it.

  • Step 6: Store in an airtight container in the refrigerator for up to 1 week.
