My Sausage Sandwich

"We live in South Jersey, close by to Hammonton, which has a great Italian grocery store. They make numerous types of homemade sausage and one of my favorites is a chicken sausage with feta, garlic and spinach. Delicious! However, this recipe is all about the sandwich, you can use any type of non-breakfast type sausage. My one daughter likes hot Italian sausage and the other one loves mild. This recipe works for all three kinds plus others. Also my DH likes spaghetti sauce on his sandwich and I like mine without."

In a skillet that can be placed in the oven, add olive oil on medium heat on stove top.
Clean, remove seeds and core of pepper, cut into bite sided pieces or strips (your choice). Cut the onion the same way.
Saute onions for about 10 minutes until tender.
Add bell pepper to skillet and cook and additional 10 minutes until tender.
Remove peppers and onions from skillet and set aside. Also pre-heat the oven at 375 degrees F.
Add sausage to skillet and brown on medium high heat on all sides for about 10 minutes.
Place skillet in oven or 15 minutes or until sausage is cooked through.
Remove skillet from oven, (I place a hot mitt on the handle backwards to remind me that the skillet is HOT).
Drain fat from skillet and slice up sausage.
Add sausage to skillet along with peppers, onions and cheese and cook on medium for 2-3 minutes to melt cheese and mix well. (If adding spaghetti sauce to the skillet, cook the mixture until hot).
Fill rolls and enjoy! Yummy!
