Step 1: In a skillet that can be placed in the oven, add olive oil on medium heat on stove top.
Step 2: Clean, remove seeds and core of pepper, cut into bite sided pieces or strips (your choice). Cut the onion the same way.
Step 3: Saute onions for about 10 minutes until tender.
Step 4: Add bell pepper to skillet and cook and additional 10 minutes until tender.
Step 5: Remove peppers and onions from skillet and set aside. Also pre-heat the oven at 375 degrees F.
Step 6: Add sausage to skillet and brown on medium high heat on all sides for about 10 minutes.
Step 7: Place skillet in oven or 15 minutes or until sausage is cooked through.
Step 8: Remove skillet from oven, (I place a hot mitt on the handle backwards to remind me that the skillet is HOT).
Step 9: Drain fat from skillet and slice up sausage.
Step 10: Add sausage to skillet along with peppers, onions and cheese and cook on medium for 2-3 minutes to melt cheese and mix well. (If adding spaghetti sauce to the skillet, cook the mixture until hot).
Step 11: Fill rolls and enjoy! Yummy!
