"This pasta salad is one that rose instantly to the top of my list, after making it the first time recently. It is so delicious and I can't wait to share it with my family! It goes well with anything off the grill and any kind of meat or poultry. PLEASE NOTE: Meats and cheeses can be purchased at the grocery store deli counter. As for them to be thick cut, approximately 1/4-1/2 inch thick. Giardiniera is an Italian mix of pickled vegetables, and can be found in your grocery store near the pickles and olives. This recipe can be halved easily. Salad can be prepped several days ahead by making the Olive Salad, and placing in the refrigerator. Cut meats and cheeses, and refrigerate. Step by Step Method

TO PREPARE THE OLIVE SALAD


Step 1

Reserve 2 tablespoons olive oil.

Step 2

In a medium bowl combine vinegar, 1/4 cup olive oil, garlic, oregano, parsley and black pepper. Whisk until well combined. Set aside.

Step 3

Cut up remaining ingredients according to ingredient list.

Step 4

Add remaining ingredients to bowl. Toss well until combined and coated. Refrigerate for 30 minutes (up to overnight).

MEANWHILE


Step 5

Bring a large pot of salted water to a boil over medium-high heat. Cook tortellini according to package directions. Remove from heat, and drain.

Step 6

While the pasta is cooking, prepare deli meats and cheeses: cut meats and cheese into bite size pieces, approximately 1/4- 1/2" in size.

Step 7

Shred Parmesan cheese, and set aside.

Step 8

Sprinkle 2 tablespoons reserved olive oil over drained tortellini. Stir to combine.

Step 9

Add Olive Salad to drained tortellini, and gently stir until well combined.

Step 10

Toss in chopped meats and cheeses, and mix in.

Step 11

Chill.

Just delicious, even if adjusted for our tastes. I made this as a main course (so was half the number of servings), subbed tomatoes for the pickled vegs since DH is not a fan of them (and added lots extra for more veggies), used fresh parsley and none of the extra cheese (the cheese in the pasta was enough for us). It is like an antipasto pasta salad and a wonderful one at that. Would definitely make this again!

This is a spectacular tasting pasta salad and one that we will enjoy many more times! It has everything but the kitchen sink in it and all the things we love. I made it ahead of time to make sure the ingredients had plenty of time to meld together. The leftovers will make great lunches for us for work too!
