Step by Step Method

Step 1

Combine hot rice with lime juice, cilantro and lime zest and keep warm (mix everything in the rice cooking pot and put the lid back on until you are ready to assemble bowlritos)

Step 2

Heat a 10 inch non stick skillet over medium-high heat.

Step 3

Add beef onions and garlic; cook and stir until beef is cooked through and lightly browned, about 5 minutes.

Step 4

Add ketchup, water and taco seasoning and mix well and cook until mixture is hot and bubbly: remove from heat.

Step 5

To assemble bowlritos: equally divide hot rice mixture among 4 serving bowls.

Step 6

Top with hot, spiced beef and toppings of your choice.

I scaled this back for two, made for a great lunch we both enjoyed. I did not happen to have brown rice on hand so went with Basmati. I see this as one that will see to a good many repeats. So easy, so good.

I used basmati rice instead of brown rice and subbed cilantro paste as I did not have any fresh stuff. I changed up the toppings a bit with what I had on hand. I loved the touch of sweetness the ketchup adds to this. All in all a very tasty "Bowlrito"

Super easy and good. I made the rice in a rice cooker so just added the lime juice and cilantro after the rice stopped cooking and went to "warm". The meat mixture takes hardly any time but I added the whole pkg of taco seasoning so it was spicy! We only added the sour cream and cheese as a topping. A very satisfying meal! Thanks for sharing!
