Step 1: Combine hot rice with lime juice, cilantro and lime zest and keep warm (mix everything in the rice cooking pot and put the lid back on until you are ready to assemble bowlritos)
Step 2: Heat a 10 inch non stick skillet over medium-high heat.
Step 3: Add beef onions and garlic; cook and stir until beef is cooked through and lightly browned, about 5 minutes.
Step 4: Add ketchup, water and taco seasoning and mix well and cook until mixture is hot and bubbly: remove from heat.
Step 5: To assemble bowlritos: equally divide hot rice mixture among 4 serving bowls.
Step 6: Top with hot, spiced beef and toppings of your choice.
