Step by Step Method
Step 1
Toss chicken with seasoning in a large bowl.
Step 2
Heat an oiled, large, deep frying pan over a medium heat and add chicken in two batches and cook, turning occasionally for about 4 minutes, or until browned all over and remove from pan.
Step 3
Add onion and carrots to the same hot pan and cook, stirring occasionally, for about 3 minutes, or until onion is soft.
Step 4
Stir in stock, vinegar and honey and bring to a boil and stir in couscous and then arrange chicken over top and cover with lid and gently boil for about 8 to 10 minutes, or until couscous is tender and chicken is cooked through.
Step 5
Add spinach and cover pan and cook for a further 2 minutes, or until spinach is just wilted and stir into chicken mixture.
Step 6
Remove from heat and serve.
