Step by Step Method
Step 1
Wash and dry the mixed salad greens thoroughly. Place them in a large salad bowl.

Prepare the blueberry vinaigrette by combining all the vinaigrette ingredients (blueberries, olive oil, balsamic vinegar, honey, Dijon mustard, salt, and black pepper) in a blender or food processor. Blend until the mixture is smooth and the blueberries are fully incorporated into the dressing. If you prefer a thicker dressing, you can mash the blueberries with a fork instead of using a blender.
Step 3
Taste the vinaigrette and adjust the sweetness or acidity to your liking by adding more honey or balsamic vinegar as needed. Set aside.
Step 4
Add the fresh blueberries, crumbled feta cheese, sliced almonds (if using), red onion, cucumber, and cherry tomatoes to the salad bowl with the mixed greens.
Step 5
Drizzle the homemade blueberry vinaigrette over the salad, starting with a few tablespoons, and toss gently to coat the salad ingredients evenly. Add more dressing if you need it, but don't overdress the salad.
