Step by Step Method

Step 1

Herb Pastry

Step 2

Beat together butter and cream cheese until well blended and fluffy.

Step 3

Blend in cream and salt.

Step 4

Work in flour and dill. Cover and chill 1 hour.

Step 5

Roll out and cut to fit 30 2" tart tins.

Filling

In skillet, melt butter and cook onions until softened.

Step 9

Stir in crab meat and sherry.

Step 10

Cook over medium low heat for 1 minute.

Step 11

Remove from heat and set aside.

Step 12

Beat eggs until lightly mixed and blend in cream.

Step 13

Stir in crab mixture and pepper to taste.

Step 14

Spoon into Pastry lined tart tins.

Step 15

Bake in 400°F oven for 15 - 20 minutes or until fillingqqq is set and lightly browned.

Delicious! I remember these mini tarts with Herb Pastry from Canadian Living, my copy long lost made me happy to see it posted! The herb pasty adds an extra touch to the mini quiche. No fresh dill or Swiss cheese available this week, had me use ferny snipped dill from my freezer stash and subbed with medium Cheddar, both worked well for me. Adding the recipe to my Appetizer Cookbook.
