Step by Step Method
Step 1
To make the pastry: in a food processor add the dry ingredients (flour - sugar) to the bowl and then pulse 8-10 times or until mixture resembles crumbs. Add egg yolk and water and process for another 10-20 seconds or until dough comes together.
Step 2
On a floured work surface, add dough and form dough into a ball and then flatten it to a disk and cover with plastic wrap and refrigerate for 30 minutes.
Step 3
Preheat oven to 375 degrees F.
Step 4
On a floured work surface, roll out dough to 1/8 inch thick round and with a 4 inch cookie cutter out out 18 rounds. Transfer rounds to into the cups of standard tart pans (if not use cookie sheets or muffin pans). Reroll remaining pastry and with a star-shaped cookie cutter, cut out 18 stars.
Step 5
Spoon mincemeat into the shells and top each one with a star. Brush pastry stars and tart edges with the egg white. Bake for 20-25 minutes or until pastry is golden and filling is bubbling. Remove from oven and transfer to a wire rack and let cook for 10 minutes. Sprinkle with confectioners sugar.
