Step by Step Method

Step 1

Preheat oven to 325°F Line a 9-inch round cake pan with parchment paper and butter the paper.

Step 2

Sift together the flour, baking powder, baking soda and salt. Set aside.

Step 3

Cream together the butter and sugars in a large bowl. Whisk in egg until well blended.

Step 4

Mix the dry ingredients, a little at a time, into the butter mixture, making sure each addition is fully incorporated before adding more.

Step 5

Stir in the mincemeat and walnuts, until evenly distributed.

Step 6

Spread batter into prepared pan and bake about 1 hour, or until knife inserted in center comes out clean. Cool slightly in pan on wire rack.

Step 7

Serve warm, with vanilla ice cream or a custard sauce, or plain like a snack cake.

This is a lovely easy cake to put together! I used homemade mincemeat that I had canned last year, as I wanted something different that just tarts or pie. This fits the bill!
