  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 8 tablespoons unsalted butter (at room temperature, 1 stick)
  • 1/2 cup light brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 cup mincemeat (jarred)
  • 1 cup walnuts, chopped

How to Make

  • Step 1: Preheat oven to 325°F Line a 9-inch round cake pan with parchment paper and butter the paper.

  • Step 2: Sift together the flour, baking powder, baking soda and salt. Set aside.

  • Step 3: Cream together the butter and sugars in a large bowl. Whisk in egg until well blended.

  • Step 4: Mix the dry ingredients, a little at a time, into the butter mixture, making sure each addition is fully incorporated before adding more.

  • Step 5: Stir in the mincemeat and walnuts, until evenly distributed.

  • Step 6: Spread batter into prepared pan and bake about 1 hour, or until knife inserted in center comes out clean. Cool slightly in pan on wire rack.

  • Step 7: Serve warm, with vanilla ice cream or a custard sauce, or plain like a snack cake.
