Step 1

Soak beans in water overnight

Step 2

Drain.

In soup pot

Step 4

Heat 2 tablespoons olive oil.

Add chopped onion

Saute until softened.

Add vegetable stock, drained beans, za'atar, lemon zest & juice, chili pepper . Simmer 3 hours . Until soft, adding water as needed

Step 8

Check for seasoning.

Step 9

Add rest of olive oil .

Step 10

Add additional salt & pepper to taste.
