Step 1: Soak beans in water overnight
Step 2: Drain.
Step 3: In soup pot
Step 4: Heat 2 tablespoons olive oil.
Step 5: Add chopped onion
Step 6: Saute until softened.
Step 7: Add vegetable stock, drained beans, za'atar, lemon zest & juice, chili pepper . Simmer 3 hours . Until soft, adding water as needed
Step 8: Check for seasoning.
Step 9: Add rest of olive oil .
Step 10: Add additional salt & pepper to taste.
