Ingredients

The ingredients are:
  • 16 ounces dried lima beans
  • 4 cups water
  • 2 tablespoons olive oil
  • 1 cup onions,chopped
  • 6 cups vegetable stock
  • 2 tablespoons za'atar spice mix
  • 1 lemon, zest,juice
  • 1 dried red chili pepper
  • 4 tablespoons extra virgin olive oil
  • 1 teaspoons salt
  • 1/2 teaspoon pepper,to taste

How to Make

  • Step 1: Soak beans in water overnight

  • Step 2: Drain.

  • Step 3: In soup pot

  • Step 4: Heat 2 tablespoons olive oil.

  • Step 5: Add chopped onion

  • Step 6: Saute until softened.

  • Step 7: Add vegetable stock, drained beans, za'atar, lemon zest & juice, chili pepper . Simmer 3 hours . Until soft, adding water as needed

  • Step 8: Check for seasoning.

  • Step 9: Add rest of olive oil .

  • Step 10: Add additional salt & pepper to taste.
