"I made some Pollo Mole and needed a recipe for Mexican rice that included the ingredients I had on hand. I used Caldo de Tomate - Chicken bouillon with tomato - which I found at Walmart."

Step by Step Method
Step 1
Heat oil in a deep skillet with cover.
Step 2
Add onions and sauté until starting to soften; add garlic and sauté for another minute.
Step 3
Add rice and sauté until starting to turn golden.
Step 4
Add cumin, chopped tomatoes and broth.
Step 5
Bring to boil, reduce heat and cover.
Step 6
When all liquid is absorbed, fluff with fork, sprinkle on a bit of cilantro and serve.
