Ingredients

The ingredients are:
  • 2 tablespoons oil
  • 2 tablespoons onion, finely minced
  • 2 garlic cloves, minced (or 2 teaspoons minced garlic from a jar)
  • 1/2 teaspoon cumin
  • 1 cup white rice
  • 2 cups chicken broth or bouillon plus water (I used Caldo de Tomate bouillon)
  • 1/2 cup Roma tomato, chopped or equivalent other tomatoes
  • Cilantro for garnish

How to Make

  • Step 1: Heat oil in a deep skillet with cover.

  • Step 2: Add onions and sauté until starting to soften; add garlic and sauté for another minute.

  • Step 3: Add rice and sauté until starting to turn golden.

  • Step 4: Add cumin, chopped tomatoes and broth.

  • Step 5: Bring to boil, reduce heat and cover.

  • Step 6: When all liquid is absorbed, fluff with fork, sprinkle on a bit of cilantro and serve.
