  • Make sure to select fresh spinach with vibrant green leaves.
  • If you don't have cherry tomatoes or radishes, you can use other vegetables to garnish the salad.

  • Substitute kale for spinach - Kale is a great substitute for spinach as it is packed with nutrients and has a slightly more robust flavor. This can add a bit of extra flavor to the salad.
  • Substitute parsley for cilantro - Parsley is a great substitute for cilantro as it has a milder flavor. This can be beneficial if you are not a fan of the strong flavor that cilantro can bring.

Taco Salad Add 1/2 cup cooked ground beef, 1/2 cup black beans, 1/4 cup diced red onion, 1/4 cup diced red pepper, and 1/2 cup shredded cheese to the spinach mixture before adding the dressing. Serve with tortilla chips.

Mexican Street Corn: Mexican Street Corn is a delicious side dish that pairs perfectly with Mexican Spinach Salad. It is made with corn, mayonnaise, chili powder, lime juice, and cotija cheese. The combination of the creamy mayo and the zesty lime juice adds a nice contrast to the salad and makes it a great combination.

Grilled Fajita Vegetables: Grilled Fajita Vegetables are a great accompaniment to Mexican Street Corn. They are made with bell peppers, onions, and zucchini that are marinated in a flavorful blend of spices and then grilled until tender and lightly charred. The smoky flavor of the vegetables pairs nicely with the creamy mayo and zesty lime juice of the Mexican Street Corn, and they add a nice crunch to the salad.

A: To keep salad ingredients fresh, store them in airtight containers in the refrigerator. Salad greens should be washed, dried and wrapped in a paper towel before storing.

Simple saladas are often the best. This salad was perfect complimenting a "kind of" Mexican meal along side Calabacitas. The Italian dressing was just right. I'll make this salad again.
