  • For a spicier flavor, try using a hot chili seasoning mix.
  • Fresh lime juice will give the chicken a more intense flavor.

  • Substitute taco seasoning mix with a homemade blend of chili powder, cumin, oregano, garlic powder, and paprika. This will provide a more authentic Mexican flavor and will allow for more control over the level of spiciness.
  • Substitute oil with butter. Butter will add a richer flavor to the marinade and will help to keep the chicken moist while cooking.

First off i had to improvise some, had no tomato sauce, used tomato paste, for my chicken pieces i used half a chicken cut up for the 2 of us. I used the taco seasoning. All in all it worked out wonderfully, great flavour!! Marinated it for about 3 hours, but goofed up with the left over marinade, burned it and couldn't use it. Grilled the chicken on our counter top grill, it came out very dark on the outside but very luscious on the inside (we liked the dark skin!). wonderful recipe I will be making again.
